My Story
When I was 14 years old, living in Poland, I had my first taste of Mexican Food and it changed my life.
Let me explain. Up until that point we didn’t have much as a family, and even when we did, there wasn’t much around to explore in terms of culinary wonders. I was born in 1985, a time when Poland was going through massive changes and no one really had much money and being under the Soviet Boot for a long time did not help us in getting exposure to world cuisine either.
My family always cooked. We learned our first meals at the age of five or six. By 14, I was well versed in a kitchen. Up until that point the flavors and textures that were available were limited to what my family cooked and the ingredients that were available to buy (and it wasn’t much… like an orange was a cherished gift for Christmas kind of “not much”). Yet food was always family, community and love.
When I first ate Mexican Food at a little restaurant called Pueblo in Gdynia (which in many ways was really just an adaptation of Mexican cuisine for the polish market, but what did I know), it was like a revelation. There were flavors and textures and combinations I have never dreamed of. Luckily, we also had internet at that time, so I was able to look up different recipes and try my hand at making foods I couldn’t imagine before. Poland still lacked many of the spices and produce that would allow me to make may of the dishes, but my repertoire was growing and with it my love for food.
When I came to America for the first time, I finally had the ability to taste global foods and gather the ingredients necessary to make them. I ventured to Korean, Ethiopian and Colombian restaurants. I shared meals with Filipinos, Nigerians, Vietnamese. I travelled to India, Brazil and Paris. And whomever I shared meals with, among the joy of the flavors, I found love, vulnerability and family. At a dinner table, we are all the same.
In these tumultuous times, when it seems we have forgotten the humanity of us all among the division, what I would love to share with you is love: The Global Cuisine I have studied, tasted and cooked for decades, delivered to your home and for your family. I hope tasting the foods from around the world will bring you and all of our world closer together.
